We are currently seeking a highly skilled and experienced Fatayer & Mowalah Chef to join our growing bakery and food production team. The ideal candidate will have extensive experience in preparing a variety of traditional Arabic pastries, particularly mini fatayer and mowalah, while maintaining the highest standards of quality, taste, and presentation.
About the RoleAs a Fatayer & Mowalah Chef, you will be responsible for managing the complete production process, from dough preparation and filling selection to baking and presentation. You will play a key role in ensuring consistency, efficiency, and customer satisfaction across all bakery products.
Key ResponsibilitiesDough Preparation & Production- Prepare and mix dough according to established recipes and production standards
- Ensure proper fermentation, proofing, and texture consistency
- Monitor dough quality and adjust ingredients as required
- Prepare a variety of traditional Arabic pastries, including:
- Cheese Fatayer
- Meat Fatayer
- Spinach Fatayer
- Zaatar Fatayer
- Assorted Mini Fatayer
- Mowalah and specialty savory pastries
- Ensure products are baked to the highest quality standards
- Prepare and manage fillings using fresh and quality ingredients
- Maintain consistency in flavor, portion sizes, and presentation
- Ensure proper storage and handling of ingredients
- Monitor product appearance, texture, and taste
- Maintain consistent production standards across all batches
- Minimize waste while maximizing productivity
- Follow all food hygiene and safety regulations
- Maintain cleanliness of workstations, equipment, and production areas
- Ensure compliance with company food safety procedures
- Proven experience as a Fatayer Chef, Mowalah Chef, Bakery Chef, or Pastry Chef
- Strong hands-on experience in producing mini fatayer and mowalah
- Experience working in bakeries, pastry shops, restaurants, or food production facilities
- Excellent knowledge of:
- Dough preparation and fermentation
- Arabic bakery products
- Savory pastry production
- Filling preparation and baking techniques
- Ability to operate bakery equipment safely and efficiently
- Strong attention to detail
- Ability to work under pressure and meet production deadlines
- Team-oriented with a positive attitude
- Passion for food quality and customer satisfaction
Experience in high-volume bakery production
Knowledge of modern baking methods and equipment
Ability to train and assist junior bakery staff
